Amritsari Fish Fry

Servings: 2 (4 pieces)

Ingredients:

  • Surmai/Black Pomfret Fish – 250g (4 pieces)
  • Besan (gram flour) – 2 tbsp
  • Rice flour – 1 tbsp
  • Ginger-garlic paste – 1 tsp
  • Red chilli powder – 1 tsp
  • Ajwain (carrom seeds) – 1/4 tsp
  • Turmeric – 1/4 tsp
  • Lemon juice – 1 tbsp
  • Salt to taste
  • Mustard oil – 1 tbsp (optional, for flavor)
  • Salt to taste

Instructions:

Take besan and water and mix all ingredients (except oil) into a thick paste. Add this to the marinated fish & combine them till they are coated well.Marinate for 30 mins.

Take rice flour on a plate, roll the marinated fish in the flour and make sure it’s uniformly dusted on both sides. Arrange all the dusted fish on a plate for frying in air fryer.

Place the fish in the basket, brush lightly with oil.

Air fry at 200°C for 17 mins, flip once halfway.

Tips:

  • Use mustard oil for that authentic Amritsari flavor.

Garlic Bread (Air fried)

Ingredients:

  • 1 cup all purpose flour (maida)
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 2 tbsp curd (yogurt)
  • 2 tbsp oil or melted butter
  • 2–3 tbsp milk (as needed, to knead)
  • 1 tsp sugar
  • ½ tsp salt
  • 2–3 garlic cloves, finely chopped
  • 2–3 tbsp grated cheese (mozzarella or processed)
  • 1–2 tbsp sweet corn, capsicum or olives (optional, for stuffing)
  • 1 tbsp melted butter mixed with ½ tsp dried mixed herbs (for brushing)

Instructions:

Make the dough:
In a bowl, mix flour, baking powder, baking soda, sugar and salt. Add curd and oil; combine to form crumbs. Gradually add milk and knead into a soft, smooth dough. Cover and rest for 10–15 minutes.

Prepare the stuffing:
In a separate bowl, mix grated cheese, corn, capsicum, olives, and half of the chopped garlic.

Shape the bread:
Roll out the dough into an oval or circle (about ½โ€ฏcm thick). Place the stuffing on one half, then fold over to form a semi circle. Press edges to seal and gently crimp them with a fork.

Flavor it:
Mix melted butter with remaining chopped garlic and dried herbs. Brush this generously over the top.

Air Fry:
Place in the preheated Bosch Air fryer. Cook at 180โ€ฏ°C for around 15 minutes until golden and crisp.

Serve:
Let it cool slightly, slice, and enjoy warm with a dip or marinara sauce.

Tips:

  • Onions – 2 medium (thinly sliced)
  • Besan (gram flour) – 1/2 cup
  • Rice flour – 2 tbsp
  • Green chilli – 1 (finely chopped)
  • Ginger – 1 tsp (grated)
  • Curry leaves – few
  • Fennel seeds – 1/2 tsp
  • Salt to taste
  • Water – a few teaspoons
  • Oil for brushing

Instructions:

  • In a bowl, combine onions with salt, ginger, green chili and curry leaves. Let them sit for about 5 minutes so the onions release moisture.
  • Add besan, rice flour and fennel seeds.
  • Mix gently, do not add water or make a batter; the moisture from the onions should be enough to bind.
  • Take small portions and loosely shape them into clusters.
  • Lightly brush the fritters with oil. Place in the air fryer basket and air fry at 180°C for about 10 minutes, flipping halfway through until crisp and golden.

Tips:

  • Do not add water unless needed as onions help in binding naturally.
  • Best served with coconut chutney or spicy tomato dip.
French Fries (Frozen)

Ingredients:

For the Cauliflower:
1 whole head of cauliflower
1 clove garlic
1 tsp cumin
1 tsp turmeric
½ tsp cayenne pepper
½ tsp paprika
6 tbsp olive oil
Salt and pepper

For the Tahini Sauce:
80 g tahini
Juice of 1 organic lemon
1 tbsp maple syrup
75 ml water
½ tsp cumin

Pomegranate seeds
Sesame seeds
Parsley

Method:

Clean the cauliflower and remove all the leaves. Press the garlic and mix with the spices and olive oil to create a marinade. Thoroughly rub the cauliflower with the marinade. Place it in the Bosch Air Fryer. Bake at 180 °C for 35-40 minutes, depending on the desired level of browning and the size of the cauliflower.

Meanwhile, whisk all the ingredients for the tahini sauce, gradually adding the water.

Drizzle the cooked cauliflower with the tahini sauce and garnish with pomegranate seeds and chopped parsley.

Crispy and Quick to Make

Serves: 6 servings

Preparation: 15 minutes

Cooking Bosch Air Fryer Serie 6: 180 °C, 8-10 minutes (adjust time for Series 4)

Ingredients:

1 roll of puff pastry
2 apples
Juice of half a lemon
30g butter
35g white sugar
35g brown sugar
1 tsp cornstarch
2.5 tsp cinnamon
1 package of vanilla sugar (8g)
75g powdered sugar
35g sliced almonds

Method:

Peel, quarter, and core the apples, then cut them into fine cubes. Put them in a pot with lemon juice, butter, sugar, cornstarch, and 1.5 tsp of cinnamon. Bring to a boil and simmer for 5 minutes until a compote forms.

Unroll the puff pastry and cut it into 12 rectangles (5 x 10 cm). Place a dollop of apple compote on 6 of the rectangles, then cover them with the remaining pastry rectangles. Press the edges together with a fork.

Mix 1 tsp cinnamon with vanilla sugar. Sprinkle the turnovers with the cinnamon sugar mixture. Place them in the basket of the Bosch Air Fryer and bake at 180°C for 8-10 minutes until crispy.

In the meantime, stir together the powdered sugar with a bit of water or lemon juice to make a glaze. Spread it over the apple turnovers and top with sliced almonds and more powdered sugar.
